Pizza Accomplished, again

A few notes: I think I need to use more cheese to prevent the bubbling holes visible on the surface. However, too much fresh mozzarella (at least in my non-woodfire oven) can turn the crust soggy. My pies are getting better; and I owe a lot of it to my co-worker’s advice and cookbooks. Thanks, Ryan!
